Worthington Farmers Market: February 2nd

When your Super Bowl guests arrive, they should find a mound of potato chips large enough to conceal a pony sitting in front of the television. For nutritional balance, you should also put out a bowl of carrot sticks. If you have no carrot sticks, you can use pinecones, or used electrical fuses, because nobody will eat them anyway. This is no time for nutritional balance: This is the Super Bowl, for God's sake.”

RECIPES

Shagbark Seed & Mill Black Bean Dip

15 ounce) Shagbark Seed & Mill Organic Black Turtle Beans, rinsed and drained
1 teaspoon vegetable oil
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup fresh corn kernels
3/4 cup chopped tomatoes
1/2 cup mild picante sauce
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice

Place black beans in a medium size mixing bowl, partially mash beans--beans should remain a little chunky. In a medium size frying pan, heat oil over a medium heat. Stir in onion and garlic and saute for 4 minutes. Mix beans, corn, tomato, picante sauce, cumin, and chili powder into the frying pan; cook for 5 minutes or until thickened. Remove the pan from the heat, mix in cheese, cilantro and lime juice; stir until cheese is melted.

The Pie Man's Pepperoni Rolls

2 pkg. active dry yeast
2 1/2 cups warm water
1/2 cup milk
1 tsp. salt
1/2 cup butter
1/3 cup sugar
2 eggs
9-10 cups of flour (depending on consistency)

Dissolve yeast in warm water and add remaining ingredients. Mix well, knead & knead the dough thoroughly. Let dough rise once, then cut a 3 inch portion of dough with kitchen shears. Flatten each piece with palm of hand. Lay two pieces of pepperoni on dough and roll as a jelly roll. Press ends together and let rise a second time on greased cookie sheet. If rolls tend to separate, press ends together before baking. Bake until golden brown at 350 degrees. Brush baked rolls with beaten egg for a glossy appearance (if desired).

Luna Burger Farmhouse Chili

 1 Tablespoon olive oil
1 Onion, chopped
1 Green or Red Pepper, or both, chopped
1 Cup chopped mushrooms
1 jalapeno or serrano chile, seeded and minced (optional)
4 Luna Burger Farmhouse Chili Burgers, thawed
1-2 Cups Water, depending on how thick you like your chili
1 (28oz) can or 3 ½ Cups crushed tomatoes
1 (15.5oz) can or 1½ Cups cooked pinto or kidney beans
1 Cup frozen corn
Salt and ground black pepper to taste

Heat olive oil on medium heat in a large saucepan. Add vegetables and saute until soft. Crumble burgers into pan and saute for a few more minutes. Add water, crushed tomatoes, salt and pepper to taste and bring to a boil. Reduce heat to low, add beans and corn and simmer, covered, for 15 minutes. Taste and adjust seasonings. Garnish with some fresh cilantro and avocado and serve. Serves 4-6
